With more than a decade of experience at the forefront of prominent hotel kitchens, Bruno Rocha is returning to Tivoli Hotels & Resorts where he was in charge of food and beverage concepts at the Tivoli Victoria and The Residences at Victoria Golf Club from 2009 to 2015. Under his leadership, EMO Restaurant in Vilamoura, Algarve, won the prestigious Golden Fork award, bestowed by Portugal’s main hotels and restaurant guide, four consecutive times. He was also one of the founders of “Algarve Chefs Week”, an annual gastronomy event bringing together top chefs from luxury hotels across the southern coastal region of Portugal.
After two years developing the culinary offerings at the Bairro Alto Hotel in Lisbon, the Portuguese-born chef is back in the Algarve helming the Tivoli Carvoeiro Food & Beverage team. Well known for his open-minded and high-spirited approach towards haute cuisine, Rocha’s unique style combines an in-depth and disciplined knowledge of Portuguese culinary traditions with a fearless approach towards cutting edge tastes and aromas.
“Transforming the old into the new, conveying our history at the table in a clearer, more interactive and even provocative manner – these are the guiding principles which we want to see brought to life at our restaurants and in our services,” explained the new Executive Chef.
“Feet firmly planted in Portugal and head aloft in the world” is how Rocha describes the new concept he has ushered in at The One Wine Boutique, the gourmet restaurant at the Tivoli Carvoeiro which takes guests on a gastronomic journey via local vineyard teasures and fresh sustainable fare.
“The cuisine at The One Wine Boutique is brought to life with regional products and authentic Portuguese recipes, but also allows French technique and the finesse of Asian minimalism to shine. Revealing art, commitment and generosity, Portuguese wine making is the centrepiece of this new space. We want to showcase local producers, the region's unique supply, and generally the best that the Algarve has to offer,” said Rocha.
Tivoli Carvoeiro, which underwent a full renovation last year, offers a full spectrum of upscale dining options against a stunning cliffside Algarve landscape: light meals made with fresh local produce at the Mare Bistro; seafood and delicious wines at MED Food & Wine; sunset snacks at the Azur Bar; and excellent cocktails and a new street food concept at the Sky Bar Carvoeiro, as well as the tribute to Portuguese emotion at The One Wine Boutique.
